FINALLY!

I know, I haven't blogged in FOREVER! Did you miss me?? Well, I'm back! With lots of great recipes for you!!

One of my favorite things to order at a restaurant is....chicken fingers. I know, so sophisticated. I have been searching for a really good homemade recipe for a while. I finally found it!! This recipe is so so so so easy AND inexpensive, and really really really really good!! The recipe I am posting feeds about 2 people, so just multiply it out to feed your family. Honestly, I don't even measure it out. I just "eye-ball" it. All you need are the following ingredients:

1 cup Bisquick
2 Tablespoons of dijon mustard
5-7 chicken tenders

Mix the Bisquick and mustard with a fork. It will be crumbly and somewhat moist. Take each chicken finger and coat with mixture. Press each side with the mixture to make it stick. Fry in oil on medium/medium high heat until golden brown and chicken is cooked through. YES! No milk or egg wash!! Enjoy! If you try it, let me know what you think!
